Recipe Foie gras with orange - Take a fresh liver, Salt it like a roast - Sweeten the liver (sprinkle lightly) - Sprinkle cointreau - Deglaze the pot with the cointreau - Put pieces of orange peels in the pot and on the liver - " Stuff " the liver into the pot with pieces of peels - Sterilize for 35 minutes at 100°C
Recipe Foie gras with onions - Take a fresh liver, salt it like a roast - Sweeten the liver (sprinkle lightly) - Sprinkle with an Porto mixture - Armagnac - Deglaze the pot with this mixture - Put pieces of onions (if possible with red onions : more taste and sweeter) in the pot and on the liver - "Stuff " the liver into the pot with pieces of onion. - Sterilize for 35 minutes at 100°C
Foie gras with the curry This recipe is the same one as the traditional foie gras but curry is used instead of pepper. recipe for the unconditional ones of the curry. |
